1 cup apple cider

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or butter.

    In a saucepan over medium heat, bring the apple cider to a boil. Reduce the heat and let it simmer until it reduces to about 1/2 cup, stirring occasionally (around 10-12 minutes). Allow it to cool slightly.

      In a large bowl, whisk together the granulated sugar, brown sugar, melted butter, egg, and vanilla extract until smooth.

        Stir in the reduced apple cider until well combined.

          In another bowl, sift together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

              Using a piping bag or a zip-top bag with the corner snipped off, fill each donut cavity about 2/3 full with the batter.

                Bake in the preheated oven for 10-12 minutes or until the donuts are golden brown and a toothpick inserted comes out clean.

                  While the donuts are baking, mix together the 1/4 cup granulated sugar and 1 teaspoon cinnamon in a shallow bowl.

                    Once baked, remove the donuts from the oven and allow them to cool for 5 minutes before transferring to a wire rack.

                      While still warm, coat each donut in the cinnamon sugar mixture, ensuring it is well-covered.

                        Let cool completely on the wire rack before enjoying!
