Ingredients
  

4 large whole wheat tortillas

1 can (15 oz) black beans, rinsed and drained

4 large eggs

1 cup salsa (store-bought or homemade)

1 avocado, diced

1 cup shredded cheddar cheese

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Olive oil (for frying eggs)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make Tortilla Bowls:

      - Lightly brush each tortilla on both sides with olive oil.

        - Press the tortillas into bowls by placing them in oven-safe muffin tins or small oven-safe bowls.

          - Bake in the preheated oven for 8-10 minutes until they are crispy and golden brown. Remove and set aside.

            Prepare the Beans:

              - In a small saucepan, combine the black beans, cumin, chili powder, and a pinch of salt. Heat over medium-low until warm and slightly mashed, stirring occasionally (about 5 minutes).

                Cook the Eggs:

                  - In a frying pan, heat a little olive oil over medium heat.

                    - Crack the eggs into the pan and cook to your desired doneness (sunny-side up or over-easy works well).

                      - Season with salt and pepper.

                        Assemble the Bowls:

                          - Spoon a layer of the warm spiced black beans into the bottom of each tortilla bowl.

                            - Top with the cooked egg, salsa, diced avocado, and shredded cheese.

                              Garnish & Serve:

                                - Sprinkle with fresh cilantro and serve with a dollop of sour cream if desired.
