1/4 cup beef drippings (or vegetable oil)

Preparation of Batter: In a mixing bowl, whisk together the flour and salt. In a separate bowl, beat the eggs and then add the milk, whisking until combined. Gradually add the wet mixture to the dry ingredients, whisking continuously to form a smooth batter. Let the batter rest for at least 30 minutes at room temperature; this helps to create a lighter pudding.

    Preheating the Oven: Preheat your oven to 425°F (220°C). Place your muffin tin or Yorkshire pudding tray in the oven while it’s heating up to ensure that it gets very hot.

      Adding Drippings: Once the oven has heated, carefully remove the hot tin from the oven. Add about a teaspoon of beef drippings (or vegetable oil) into each compartment. The fat should shimmer and be very hot to create the best rise.
