4 cups all-purpose flour

1 ½ teaspoons salt

1 tablespoon sugar

1 tablespoon instant yeast

1 ½ cups warm water (110°F/43°C)

¼ cup olive oil (plus extra for greasing)

1 teaspoon ground cumin (optional)

Sesame seeds (for sprinkling, optional)

Activate the Yeast: In a small bowl, combine warm water, sugar, and instant yeast. Let it sit for about 10 minutes until it becomes frothy.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, salt, and ground cumin (if using). Stir together.

      Combine Ingredients: Make a well in the center of the dry mixture. Pour in the yeast mixture and olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms.

        Knead the Dough: Transfer the dough onto a lightly floured surface. Knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little flour as needed.

          First Rise: Shape the dough into a ball and place it in a greased bowl. Cover it with a damp cloth or plastic wrap. Let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.

            Shape the Bread: Once risen, punch down the dough to release the air. Divide it into equal portions (about 8-10) and shape each piece into a round ball. Flatten each ball gently with your hand to form a disk.

              Second Rise: Place the shaped dough onto a baking sheet lined with parchment paper. Cover them lightly with a cloth and let them rise for another 30 minutes.

                Preheat the Oven: While the dough is rising, preheat your oven to 425°F (220°C).

                  Bake the Bread: Once the second rise is complete, optionally sprinkle sesame seeds on top of each disk. Bake in the preheated oven for about 15-20 minutes or until golden brown.
