Ingredients

2 large yellow onions, finely chopped

3 tablespoons olive oil

1 teaspoon salt

1 tablespoon sugar

1 cup sour cream

1 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

1 cup cream cheese, softened

½ cup grated Parmesan cheese

¼ cup chopped fresh chives (for garnish)

Tortilla chips or sliced baguette (for serving)

Instructions

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onions and sprinkle with salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are soft and caramelized. Sprinkle in the sugar halfway through to enhance the sweetness of the onions.

Mix the Base: In a large mixing bowl, combine sour cream, mayonnaise, garlic powder, and onion powder. Mix until smooth and creamy.

Incorporate Cheeses: Fold the softened cream cheese into the mixture until well blended. Then, gently stir in the shredded cheddar and Parmesan cheese until evenly distributed.

Combine and Bake: Add the caramelized onions to the cheese mixture, folding it carefully until everything is combined. Transfer the mixture into a baking dish.

Bake: Preheat your oven to 350°F (175°C). Bake the dip in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven, and let it cool for a few minutes. Sprinkle with fresh chives before serving. Serve warm with tortilla chips or slices of baguette.
