For the Chicken:

1 lb chicken breast, boneless and skinless

1/4 cup honey

1/4 cup fresh lime juice

2 cloves garlic, minced

1 tsp chili powder

Salt and pepper to taste

Olive oil, for cooking

For the Avocado Rice:

1 cup jasmine rice

2 cups water or chicken broth

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Assembly:

Lime wedges, for garnish

Fresh cilantro leaves, for garnish

Marinate the Chicken: In a mixing bowl, whisk together honey, lime juice, minced garlic, chili powder, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

      Prepare the Avocado Mixture: In a large bowl, combine the cooked rice, diced avocado, cherry tomatoes, red onion, cilantro, lime juice, and salt. Gently mix to combine, taking care not to mash the avocado.

        Cook the Chicken: Heat a large skillet over medium-high heat with a drizzle of olive oil. Remove the chicken from the marinade, allowing any excess to drip off. Cook the chicken for 6-7 minutes on each side, or until fully cooked and golden brown. The internal temperature should reach 165°F (75°C). Once cooked, remove from heat and let it rest for a few minutes before slicing.
