1 lb (450g) baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

3 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a small saucepan over low heat, combine the butter, honey, and minced garlic. Stir until the butter is melted and the mixture is well blended. Remove from heat and stir in the thyme, salt, and pepper.

      In a large mixing bowl, toss the baby carrots with the honey garlic butter sauce until they are evenly coated.

        Spread the carrots in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded to ensure even roasting.
