Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1/2 tsp garlic powder

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup unsalted butter

1/2 cup honey

1 tbsp soy sauce

1 tsp vanilla extract

Chopped parsley for garnish (optional)

Instructions

Prepare the Chicken: In a bowl, mix together flour, salt, pepper, paprika, and garlic powder. In another bowl, beat the eggs, and place the panko breadcrumbs in a third bowl.

Dredging Process: Dip each piece of chicken into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is evenly coated and set aside on a plate.

Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot.

Fry the Chicken: Carefully add the coated chicken pieces in batches, frying for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on a paper towel-lined plate.

Make the Honey Butter Sauce: In a separate saucepan over low heat, melt the butter. Once melted, stir in the honey, soy sauce, and vanilla extract. Allow it to simmer for 2-3 minutes until slightly thickened and combined well.

Combine Chicken and Sauce: Place the fried chicken in a large bowl, drizzle the honey butter sauce over the top, and toss gently to coat each piece thoroughly.

Serve: Transfer the honey butter chicken to a serving dish, garnish with chopped parsley if desired, and enjoy warm!
