Ingredients

1 pound ground pork

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon crushed red pepper flakes (optional for heat)

1 tablespoon maple syrup (optional for sweetness)

2 tablespoons olive oil or butter for frying

Instructions

Mix the Ingredients: In a large bowl, combine the ground pork with salt, black pepper, sage, thyme, garlic powder, onion powder, and red pepper flakes (if using). If you'd like a hint of sweetness, add the maple syrup. Mix everything together until just combined, being careful not to overwork the meat.

Shape the Patties: Divide the mixture into 6-8 equal portions, depending on your desired patty size. Form each portion into a round patty about 1/2 inch thick. Make a slight indentation in the center of each patty to prevent puffing while cooking.

Chill the Patties (Optional): For firmer patties, you can refrigerate them for at least 30 minutes. This step helps them hold their shape during cooking.

Heat the Pan: In a large skillet, heat the olive oil or butter over medium heat until shimmering.

Cook the Patties: Add the sausage patties to the skillet in a single layer. Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 160°F (70°C).

Serve and Enjoy: Remove the patties from the skillet and let them rest for a minute before serving. Enjoy them on a breakfast sandwich, alongside eggs, or on their own with your favorite dipping sauce!
