2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 tablespoons granulated sugar

1 teaspoon vanilla powder (optional)

1 tablespoon powdered milk (optional, for creaminess)

Instructions
 

In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Whisk together until all dry ingredients are evenly distributed.

    If using, add the vanilla powder and powdered milk to the dry mixture, ensuring they are well incorporated.

      Store the homemade pancake mix in an airtight container or a mason jar for up to 2 months in a cool, dry place.

        To prepare pancakes, measure out 1 cup of pancake mix into a bowl, and create a well in the center.

          In another bowl, mix together 1 cup of milk (or your choice of milk alternative), 1 large egg, and 2 tablespoons of melted butter or oil.

            Pour the wet ingredients into the well of the dry ingredients and gently stir until just combined. Don’t overmix; a few lumps are okay.

              Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

                Pour 1/4 cup of the pancake batter onto the skillet for each pancake.

                  Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook the other side until golden brown, about another 2 minutes.

                    Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
