Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup BBQ sauce (preferably your favorite brand)

1 cup crushed BBQ-flavored potato chips

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Cooking spray or vegetable oil for frying

Fresh parsley, chopped (for garnish, optional)

Instructions

Prepare Chicken: In a medium bowl, coat the chicken pieces with BBQ sauce, making sure all pieces are well-covered. Let it marinate for at least 30 minutes in the refrigerator for enhanced flavor.

Set Up Breading Station: In one bowl, place the flour mixed with garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, add the crushed BBQ potato chips.

Bread the Chicken: Remove the marinated chicken from the refrigerator. Take a piece of chicken and dip it into the flour mixture, shaking off excess. Then, dip it into the egg, allowing the excess to drip off, and finally, cover it with the crushed BBQ chips, pressing gently to adhere. Repeat with all chicken pieces.

Fry the Nuggets: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Once the oil is hot (about 350°F), carefully add the breaded chicken nuggets in batches, avoiding overcrowding. Fry for about 4-5 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to transfer the nuggets to a paper towel-lined plate to drain excess oil.

Serve: Garnish with fresh parsley if desired. Serve warm with additional BBQ sauce for dipping!
