Ingredients

2 cans (15 oz each) navy beans, drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1/4 cup ketchup

1/4 cup brown sugar

2 tablespoons molasses

1 tablespoon apple cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

1 tablespoon olive oil

1 cup vegetable broth (or chicken broth)

Instructions

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Stir in the ketchup, brown sugar, molasses, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, black pepper, and salt. Mix well to combine.

Pour in the vegetable broth and bring the mixture to a gentle boil, stirring occasionally.

Once boiling, add the drained navy beans, stirring to coat them evenly with the sauce.

Reduce the heat to low and let the beans simmer uncovered for about 20-30 minutes, stirring occasionally. This will allow the flavors to meld and the sauce to thicken.

Taste and adjust seasoning if necessary; if you prefer a sweeter taste, add more brown sugar.

Remove from heat and let cool slightly before serving. They can be enjoyed warm or at room temperature.
