Hearty Veggie Rolls with Peanut Sauce

8 rice paper wrappers

1 cup shredded purple cabbage

1 cup julienned carrots

1 cup sliced bell peppers (any color)

1 cup cucumber, julienned

1 ripe avocado, sliced

1/2 cup fresh cilantro leaves

1/2 cup fresh mint leaves

1/4 cup green onions, chopped

1 tablespoon sesame seeds (for garnish)

Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon maple syrup or honey

1 tablespoon rice vinegar

1 tablespoon lime juice

2-3 tablespoons water (to thin out the sauce, as needed)

1 clove garlic, minced

1/2 teaspoon grated fresh ginger (optional)

Red pepper flakes (to taste)

Instructions
 

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, lime juice, minced garlic, and grated ginger. Slowly add water, one tablespoon at a time, until you reach your desired consistency. Season with red pepper flakes to taste. Set aside.

    Prep the Veggies: In a large mixing bowl, combine the shredded cabbage, carrots, bell peppers, cucumber, avocado, cilantro, mint, and green onions. Toss gently to mix the ingredients evenly.

      Soak the Rice Paper Wrappers: Fill a large dish or shallow bowl with warm water. Carefully dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes soft and pliable. Remove it and lay it flat on a clean, damp surface.

        Assemble the Rolls: Take a generous amount of the veggie mix and place it on the lower third of the rice paper wrapper. Leave about an inch of space around the sides. Fold the sides of the wrapper inward, then roll it up tightly from the bottom to the top, similar to rolling a burrito. Repeat this process until all ingredients are used.

          Serve: Place the veggie rolls on a serving platter. Drizzle or serve the peanut sauce in a small bowl alongside the rolls for dipping. Sprinkle sesame seeds over the top for garnish.
