For the Veggie Rolls:

1 cup cooked quinoa

1 cup shredded carrots

1 cup finely chopped bell peppers (red and yellow)

1 cup chopped cucumber

1 cup shredded purple cabbage

½ cup fresh cilantro leaves, chopped

8-10 rice paper wrappers

Lettuce leaves for wrapping

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon maple syrup or honey

1 teaspoon sesame oil

1-2 tablespoons warm water (to thin out sauce)

Optional: chopped peanuts and chili flakes for garnish

Instructions
 

Prepare the Ingredients:

    - In a medium bowl, combine the cooked quinoa, shredded carrots, chopped bell peppers, cucumber, purple cabbage, and cilantro. Mix well to incorporate all the veggies evenly.

      Make the Peanut Sauce:

        - In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup or honey, and sesame oil. Add warm water gradually until you reach your desired consistency (smooth and pourable). Adjust seasoning if necessary.

          Soak the Rice Paper Wrappers:

            - Fill a shallow bowl with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it becomes pliable. Remove from water and place it on a clean, damp kitchen towel.

              Assemble the Rolls:

                - Place a lettuce leaf on the bottom third of the softened rice paper wrapper. Add a couple of tablespoons of the veggie mixture on top of the lettuce. Be careful not to overfill.

                  - Fold the sides of the rice paper over the filling, then roll from the bottom up to create a tight roll. Repeat the process with the remaining wrappers and filling.

                    Serve:

                      - Cut the veggie rolls in half or serve them whole. Arrange on a platter, and serve with the peanut sauce on the side for dipping. Garnish with chopped peanuts and chili flakes if desired.
