1 cup mixed nuts (e.g., almonds, walnuts, cashews), roughly chopped

1/2 cup seeds (e.g., pumpkin, sunflower)

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil or olive oil

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup dried fruit (e.g., cranberries, raisins, apricots), chopped (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, ground cinnamon, and salt. Stir well to combine all the dry ingredients evenly.

      Combine Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup), coconut oil, and vanilla extract. Stir until the mixture is well combined and warmed through but not boiling.

        Combine Wet and Dry: Pour the warm honey mixture over the dry ingredients. Use a spatula or wooden spoon to mix thoroughly until all dry ingredients are well coated.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Spread it into an even layer, pressing it down gently to encourage clumping.

            Bake: Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it to avoid burning—the granola should be golden brown.

              Add Dried Fruit: Once you remove the granola from the oven, gently stir in the dried fruit (if using) and allow it to cool completely on the baking sheet. The granola will become crunchy as it cools.

                Store: Once cooled, break the granola into clusters and store it in an airtight container at room temperature for up to two weeks.
