Healthy Grilled Chicken Salad

Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 cups mixed salad greens (spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1 medium cucumber, sliced

1 avocado, diced

¼ cup red onion, thinly sliced

¼ cup feta cheese, crumbled (optional)

¼ cup balsamic vinaigrette dressing

Instructions
 

Marinate the Chicken: In a small bowl, whisk together olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well-coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Prepare the Grill: Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

      Grill the Chicken: Once the grill is hot, add the marinated chicken breasts. Grill for approximately 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from the grill and let it rest for 5 minutes before slicing.

        Assemble the Salad: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, and red onion. Toss gently to mix.
