1 lb lean ground turkey or chicken

1/2 cup quinoa, rinsed and cooked

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1 avocado, diced

1/4 cup pickles, chopped

1/2 cup Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Fresh herbs (e.g., parsley or cilantro) for garnish

Instructions
 

Cook the Quinoa: In a small saucepan, add the rinsed quinoa and 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Prepare the Turkey: In a large mixing bowl, combine the ground turkey (or chicken) with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

      Form the Patties: Divide the meat mixture into 4 equal sections and form them into burger patties, about 1/2 inch thick.

        Cook the Patties: Heat a skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5-6 minutes on each side or until they are cooked through and have a nice brown crust.

          Assemble the Bowl: In serving bowls, start with a base of cooked quinoa. Top with fresh spinach, cherry tomatoes, diced avocado, pickles, and red onion.
