Hawaiian Shoyu Chicken

2 lbs chicken thighs, boneless and skinless

1 cup soy sauce

1 cup brown sugar, packed

1/2 cup pineapple juice

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1/4 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, and sesame oil. Whisk until the sugar is dissolved. Add the chicken thighs to the marinade, making sure they're fully coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare to Bake: Remove the chicken from the marinade and set aside. Pour the marinade into a saucepan and bring it to a boil over medium heat. Allow it to simmer for about 5-10 minutes until it thickens slightly.

        Bake the Chicken: Place the chicken thighs on a baking sheet lined with parchment paper. Brush some of the thickened marinade over the chicken. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

          Glaze and Broil: For an extra glazed finish, turn on the broiler and broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.

            Serve: Remove the chicken from the oven and let it rest for a couple of minutes. Drizzle with more thickened marinade, sprinkle with chopped green onions and sesame seeds, and serve over cooked rice for a complete meal.
