8 Hawaiian sweet rolls

4 large eggs

1 cup whole milk

1/2 cup coconut milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon unsalted butter (for cooking)

Sliced fresh pineapple (for topping)

In a mixing bowl, whisk together the eggs, whole milk, coconut milk, sugar, vanilla extract, cinnamon, and salt until well combined.

    Slice the Hawaiian rolls in half horizontally, so you have 16 halves.

      Preheat a large skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.

        Dip each roll half into the egg mixture, making sure to soak it thoroughly but not overly soggy. Let the excess drip off.

          Place the soaked roll halves on the skillet, cut-side down. Cook for about 3-4 minutes on each side, or until they’re golden brown and crispy.

            Remove the cooked roll halves from the skillet and keep warm in a low oven while you repeat the process with the remaining rolls.

              Serve warm, topped with fresh pineapple slices, a sprinkle of shredded coconut, and a generous drizzle of maple syrup.
