1 ½ cups crushed graham crackers

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

¼ cup sugar

For the Filling:

1 cup fresh pineapple, finely chopped

1 cup cream cheese, softened

½ cup powdered sugar

1 cup whipped cream

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

For the Topping:

1 cup whipped cream

½ cup toasted coconut flakes

Additional pineapple slices for garnish

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed graham crackers, shredded coconut, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes until lightly golden, then remove from the oven and let it cool completely.
