Ingredients

2 medium russet potatoes

2 tablespoons olive oil

Salt and pepper to taste

2 large slices of whole-grain bread

1 ripe avocado

Juice of 1 lime

4 slices of prosciutto

Fresh arugula or baby spinach (for garnish)

Red pepper flakes (optional, for garnish)

Balsamic glaze (optional, for drizzling)

Instructions

Prepare the Potatoes:

    - Peel the russet potatoes and shred them using a box grater or food processor. Transfer the shredded potatoes to a bowl filled with cold water to remove excess starch. Let them soak for about 10-15 minutes.

      Drain and Dry:

        - Drain the potatoes and place them on a clean kitchen towel. Wrap the towel around the potatoes and twist to squeeze out as much moisture as possible. This step is crucial for achieving crispy hash browns.

          Cook the Hash Browns:

            - In a non-stick skillet, heat the olive oil over medium-high heat. Once the oil is hot, spread the dried potatoes evenly in the skillet, pressing them down with a spatula. Season with salt and pepper.

              - Cook for about 5-7 minutes until the bottom is golden brown and crispy. Flip and cook the other side for another 5-7 minutes until crispy and golden.

                Toast the Bread:

                  - While the hash browns are cooking, toast the slices of whole-grain bread in a toaster or under the broiler until golden and crispy.

                    Prepare the Avocado Spread:

                      - In a bowl, mash the ripe avocado with lime juice, adding salt and pepper to taste for flavor.

                        Assemble the Toast:

                          - Spread a generous amount of the avocado mixture over each slice of toasted bread. Top with the crispy hash browns and arrange the prosciutto slices over the top.

                            Garnish and Serve:

                              - Add a handful of fresh arugula or baby spinach on top. For an extra kick, sprinkle with red pepper flakes and drizzle a bit of balsamic glaze if desired.

                                Enjoy:

                                  - Serve immediately and enjoy the delightful blend of crispy, creamy, and savory flavors!
