Ground Turkey Teriyaki Stir Fry

Ingredients
  

1 lb ground turkey

2 tbsp vegetable oil

1 cup broccoli florets

1 bell pepper (sliced, any color)

1 cup snap peas

1 medium carrot (julienned)

3 cloves garlic (minced)

1 tbsp fresh ginger (minced)

1/3 cup soy sauce (low sodium)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp cornstarch mixed with 2 tbsp water

Sesame seeds (for garnish)

Green onions (sliced for garnish)

Steamed rice or quinoa (for serving)

Instructions
 

Heat the vegetable oil in a large skillet or wok over medium-high heat.

    Add the ground turkey and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain any excess fat.

      Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

        Add the broccoli, bell pepper, snap peas, and carrot to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender-crisp.

          In a bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil until combined.

            Pour the sauce over the turkey and vegetables, then stir well to coat.

              Add the cornstarch mixture to the skillet and stir continuously for about 2 minutes, until the sauce thickens and everything is well coated.

                Remove from heat and serve the stir fry over steamed rice or quinoa.

                  Garnish with sesame seeds and sliced green onions before serving.
