Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 garlic cloves, minced

1 bell pepper (any color), diced

1 cup fresh spinach (optional)

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

¼ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened.

    Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

      Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with salt, pepper, smoked paprika, cumin, chili powder, and cayenne pepper. Mix well. Cover the skillet and let the sweet potatoes cook for about 10-15 minutes, stirring occasionally, until they are tender.

        Brown the Turkey: Push the sweet potatoes to one side of the skillet. Add the ground turkey to the empty side of the skillet. Break it apart with a spatula and cook for 5-7 minutes, or until browned and cooked through.

          Combine and Cook: Once the turkey is cooked, mix it with the sweet potatoes. If using spinach, stir it in now until wilted. Taste and adjust seasoning if necessary.

            Serve: Remove from heat, garnish with fresh cilantro or parsley, and serve hot. Enjoy your delicious and nutritious meal!
