Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small onion, chopped

2 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned with juices or fresh)

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)

2 tbsp olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the sweet potatoes: In a large pot, bring water to a boil and add the diced sweet potatoes. Boil for 10 minutes until tender. Drain and set aside.

      Sauté the turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onions are translucent, about 3-5 minutes.

        Brown the turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 7-10 minutes. Drain any excess fat if necessary.

          Combine ingredients: Stir in the black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for another 3-5 minutes until everything is heated through.

            Layer the casserole: In a greased 9x13 inch baking dish, layer half of the cooked sweet potatoes first. Pour half of the turkey mixture over the sweet potatoes. Repeat the layers with the remaining sweet potatoes and turkey mixture.

              Add cheese: If using, sprinkle the shredded cheddar cheese on top of the final layer.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
