Ground Turkey and Peppers

This vibrant dish combines lean ground turkey, hearty black beans, and sweet corn, all seasoned to perfection with cumin and smoked paprika. Ingredients
  

1 lb ground turkey

4 large bell peppers (any color)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cooked quinoa or rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

2 tbsp olive oil

Fresh cilantro or parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add the minced garlic to the skillet and sauté for another minute until fragrant.

        Incorporate the ground turkey into the skillet, breaking it apart with a spatula, and cook until browned, about 7-10 minutes.

          Stir in the cooked quinoa or rice, black beans, corn, cumin, smoked paprika, chili powder, salt, and pepper. Cook for an additional 5 minutes until everything is well combined and heated through.

            Remove the skillet from heat and stir in half of the shredded cheese until melted and evenly distributed.

              Stuff each bell pepper generously with the turkey and mixture, packing it down slightly. Place the stuffed peppers upright in a baking dish.

                Top the stuffed peppers with the remaining cheese.

                  Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is golden.

                    Carefully remove the baking dish from the oven, allow to cool slightly, then garnish with fresh cilantro or parsley before serving.
