Juice of 1 lime

1 cup corn (fresh, frozen, or canned)

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium ripe tomato, diced

1 jalapeño, finely diced (optional, for spice)

Juice of 1 lime

Salt to taste

Fresh cilantro, chopped (for garnish)

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt or sour cream

2 cloves garlic, minced

1 tbsp lemon juice

1 tbsp olive oil

Salt and black pepper to taste

Water, as needed for consistency

For Serving:

Cooked white or brown rice (about 2 cups)

Instructions
 

Marinate the Shrimp:

    - In a bowl, combine olive oil, minced garlic, smoked paprika, chili powder, lime juice, salt, and black pepper. Add the shrimp and toss to coat. Let it marinate for at least 15 minutes.

      Prepare the Corn Salsa:

        - In a separate bowl, mix together the corn, diced avocado, chopped red onion, diced tomato, and jalapeño (if using). Squeeze lime juice over the mixture and season with salt. Gently fold everything together and set aside.
