1 pound fresh shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

Salt and pepper to taste

For the Corn Salsa:

1 cup corn kernels (fresh or frozen and thawed)

1 medium tomato, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and diced (optional for heat)

Juice of 1 lime

Salt and pepper to taste

2 tablespoons chopped fresh cilantro

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

2 cups cooked rice (white, brown, or quinoa)

1 ripe avocado, sliced

Fresh cilantro sprigs for garnish

Lime wedges for serving

Marinate the Shrimp: In a medium bowl, combine olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Add the shrimp, tossing well to coat. Let the shrimp marinate for at least 15 minutes while preparing the other components.

    Prepare the Corn Salsa: In a separate bowl, mix together the corn, diced tomato, red onion, jalapeño (if using), lime juice, salt, pepper, and cilantro. Taste and adjust seasoning as needed. Set aside.

      Make the Creamy Garlic Sauce: In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth and creamy. Set aside.

        Grill the Shrimp: Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for about 30 minutes first). Grill shrimp for 2-3 minutes on each side or until they are pink and slightly charred. Remove from the grill.

          Assemble the Bowls: In serving bowls, layer the cooked rice as the base. Top with grilled shrimp, avocado slices, and a generous amount of corn salsa. Drizzle the creamy garlic sauce over the top.
