Ingredients

200g shrimp, peeled and deveined

200g scallops

200g white fish (such as cod or halibut), cut into chunks

1 cup mussels, cleaned and deveined

1 cup heavy cream

1 cup fish stock

2 tablespoons butter

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon fresh thyme leaves

1 teaspoon dill, chopped

Salt and pepper, to taste

1/2 cup Gruyère cheese, grated

1/4 cup breadcrumbs

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes.

Cook the Seafood: Add the shrimp, scallops, and white fish to the skillet. Sauté for about 5-7 minutes until the seafood is just cooked through. Be careful not to overcook.

Make the Sauce: Pour in the fish stock and cream into the skillet. Stir in the thyme, dill, salt, and pepper. Let it simmer for 5 minutes, allowing the flavors to meld together.

Prepare the Cassolette: In individual cassolette dishes (or one large baking dish), distribute the seafood mixture evenly.

Top It Off: In a bowl, mix the Gruyère cheese with breadcrumbs. Sprinkle this mixture generously over the seafood in each cassolette.

Bake: Place the cassolette dishes on a baking tray and bake in the preheated oven for about 15-20 minutes, or until the top is golden and bubbling.

Garnish and Serve: Remove from the oven, let cool slightly, and garnish with fresh parsley before serving. Enjoy your gourmet seafood cassolette!
