Ingredients
  

1 cup fresh shrimp, peeled and deveined

1 cup scallops, cleaned and halved

1 cup mussels, scrubbed and debearded

1 cup squid, cleaned and sliced into rings

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup white wine (preferably Sauvignon Blanc)

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup grated Gruyère cheese

1/4 cup fresh parsley, chopped (for garnish)

Fresh baguette, for serving

Instructions
 

Prepare the Seafood: In a large bowl, combine shrimp, scallops, mussels, and squid. Season with a pinch of salt and pepper. Set aside to marinate while preparing the sauce.

    Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and diced red bell pepper, cooking for another 2-3 minutes until soft.

      Add Tomatoes: Add cherry tomatoes to the skillet and cook until they start to soften, about 4-5 minutes.

        Deglaze the Pan: Pour in the white wine and let it simmer for about 2 minutes, allowing the alcohol to cook off.

          Create the Cream Sauce: Reduce the heat to low and stir in the heavy cream, Dijon mustard, smoked paprika, dried thyme, and adjust seasoning with salt and pepper. Let the sauce simmer gently for about 5 minutes, thickening slightly.

            Combine Seafood: Gently fold the marinated seafood into the cream sauce and cook for 5-7 minutes until the seafood is cooked through and opaque.

              Assemble Cassolette: Preheat your oven to 375°F (190°C). Transfer the seafood mixture into individual cassolette dishes or a large baking dish. Sprinkle the grated Gruyère cheese evenly on top.

                Bake: Place the cassolette(s) in the oven and bake for 15-20 minutes until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley, and serve hot alongside slices of fresh baguette for dipping.
