2 ripe avocados

4 slices of whole grain bread

1 tablespoon olive oil

Juice of 1 lemon

1 teaspoon red pepper flakes

Salt and pepper to taste

2 large eggs

1/4 cup crumbled feta cheese

1/4 cup cherry tomatoes, halved

Fresh cilantro or parsley for garnish

Instructions
 

Begin by toasting the slices of whole grain bread in a toaster until they are golden brown and crispy.

    While the bread is toasting, cut the avocados in half and remove the pit. Scoop the flesh into a bowl and mash it with a fork. Add the olive oil, lemon juice, red pepper flakes, salt, and pepper to taste. Mix well to combine.

      In a small saucepan, bring water to a simmer and gently add the eggs (one at a time) to poach for about 3-4 minutes, until the whites are set but the yolks remain runny. Remove with a slotted spoon and place on a paper towel to drain.

        Once the bread is toasted, spread a generous amount of the smashed avocado mixture onto each slice.

          Top each piece with a poached egg, sprinkle the crumbled feta cheese and halved cherry tomatoes over the top.

            Garnish with fresh cilantro or parsley, and an additional sprinkle of red pepper flakes if desired.

              Serve immediately for a quick yet gourmet breakfast.
