1 lb chicken breast, diced

1 cup jasmine rice, rinsed

4 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons lime juice (about 1 lime)

1 bell pepper (red or yellow), diced

2 carrots, sliced

1 cup snap peas, trimmed

1 tablespoon soy sauce

1 tablespoon olive oil

Prepare the Ingredients: Begin by preparing all your ingredients. Rinse the rice, dice the chicken, onion, bell pepper, and slice the carrots. Grate the ginger and mince the garlic.
