Ingredients

2 cups all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

2 large eggs

1 3/4 cups milk

1/4 cup unsalted butter, melted

1 tsp vanilla extract

1/2 cup chocolate chips or berries (optional)

Maple syrup, for serving

Whipped cream, for topping

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, beat the eggs, then stir in the milk, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine. If you’re adding chocolate chips or berries, fold them into the batter now.

Heat the Pan: Preheat a large non-stick skillet or griddle over medium-low heat. You can lightly grease it with a little butter or oil for extra flavor.

Cook the Pancake: Pour about 1 1/2 cups of batter onto the skillet, making a large pancake. Cook for about 3-5 minutes, or until bubbles form on the surface and the edges look set.

Flip and Finish: Carefully flip the pancake using a large spatula and cook for another 3-5 minutes on the other side, until golden brown and cooked through. Adjust the heat if necessary to avoid burning.

Serve: Repeat with the remaining batter, keeping pancakes warm in a low oven if needed. Serve the giant pancake topped with maple syrup and whipped cream, and perhaps some additional berries or chocolate chips for garnish.
