4 large russet potatoes

1 medium onion, finely chopped

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup olive oil (for frying)

Fresh chives, chopped (for garnish)

Prep the Potatoes: Peel the russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to remove excess starch. Let them soak for about 10 minutes, then drain and pat them dry with paper towels.

    Sauté the Onion: In a skillet, heat a small amount of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Remove from heat and let cool slightly.

      Combine Ingredients: In a large mixing bowl, combine the drained grated potatoes, sautéed onion, shredded cheddar cheese, grated Parmesan cheese, eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Form the Hash Brown: Line a large baking sheet (or a pizza stone) with parchment paper. Transfer the potato mixture onto the center of the sheet and shape it into a giant round hash brown, about 1-inch thick. Flatten it slightly with a spatula.

          Cook the Hash Brown: In a large skillet (or use a flat top grill), heat olive oil over medium heat. Carefully transfer the formed hash brown onto the skillet. Cook for about 10-12 minutes per side, or until golden brown and crispy, adjusting the heat as necessary to prevent burning.

            Finish Cooking: Once both sides are crispy, transfer the hash brown back to the baking sheet and place it in a preheated oven at 375°F (190°C) for an additional 10-15 minutes, ensuring it is cooked through in the center.
