2 large cucumbers, thinly sliced

1 teaspoon salt

1 small red onion, thinly sliced

1/2 cup sour cream or Greek yogurt

2 tablespoons white vinegar

1 tablespoon sugar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Freshly ground black pepper to taste

Optional: cherry tomatoes, halved, for garnish

Instructions
 

Prepare the Cucumbers: Place the sliced cucumbers in a large bowl and sprinkle with salt. Toss gently and let them sit for about 15-20 minutes to draw out excess moisture. This will keep the salad crisp.

    Rinse and Dry: After 20 minutes, rinse the cucumbers under cold water to remove the excess salt and pat them dry with paper towels.

      Mix the Dressing: In a separate bowl, combine the sour cream (or Greek yogurt), white vinegar, sugar, fresh dill, and black pepper. Whisk together until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, add the dried cucumbers and sliced red onion. Pour the dressing over the vegetables and toss gently until everything is evenly coated.

          Chill and Serve: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with optional cherry tomatoes if desired.
