Ingredients

8 ounces fettuccine or spaghetti

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup fresh parsley, chopped

Zest of 1 lemon (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Make the Garlic Butter: In the same pot over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Create the Sauce: Reduce the heat to low, then pour in the heavy cream. Stir well and let it heat up for about 2 minutes without boiling.

Add Cheese and Seasonings: Gradually whisk in the grated Parmesan cheese until the sauce is smooth. Season with salt, black pepper, and red pepper flakes if you'd like a hint of spice. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.

Combine Pasta and Sauce: Add the cooked pasta to the sauce and toss until well-coated. If needed, adjust the consistency with more pasta water or cream.

Garnish and Serve: Stir in the chopped parsley and lemon zest for an awesome fresh flavor boost. Serve immediately with extra Parmesan cheese and parsley on top if desired.
