For the Steak Bites:

1 pound sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

For the Potatoes:

1 pound baby potatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, smoked paprika, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet.

    Roast the Potatoes: Bake the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, flipping them halfway through for even cooking.

      Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Season the steak bites with salt and pepper. Add 2 tablespoons of butter to the skillet. Sear for about 2-3 minutes on each side until browned and cooked to your desired level of doneness.
