4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

For the Crispy Potatoes:

1 lb (450g) baby potatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt, to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, smoked paprika, and salt. Spread them out in a single layer on a baking sheet lined with parchment paper.

    Bake the Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping them halfway through to ensure even cooking.

      Cook the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. Season the steak cubes generously with salt and pepper.
