Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized pieces

2 cups baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Chopped parsley, for garnish

Prepare the Potatoes:

    Preheat your oven to 425°F (220°C). In a mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Place them cut-side down on a baking sheet. Roast for about 25-30 minutes or until golden brown and tender, flipping halfway through for even crispiness.

      Cook the Steak Bites:

        Meanwhile, heat a large skillet over medium-high heat. Season the steak pieces with salt and pepper. Add 2 tablespoons of butter to the skillet, allowing it to melt and bubble.

          Sear the Steak:

            Once the butter is sizzling, add the seasoned steak bites in a single layer. Avoid overcrowding the pan - you may need to cook in batches. Sear the steak for about 2-3 minutes on each side or until a nice crust forms and they reach a medium-rare doneness. Remove the steak from the skillet and set aside.
