Ingredients

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.

Cook the Steak: In the same skillet, increase the heat to medium-high. Add the steak pieces, season with salt and pepper, and cook for about 3-4 minutes on each side, or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

Make Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Combine Everything: Return the cooked potatoes and steak to the skillet, tossing them in the garlic butter sauce to coat evenly. Cook for an additional 2-3 minutes to heat through.

Serve: Garnish with freshly chopped parsley, if desired, and serve hot directly from the skillet.
