4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1 cup chicken broth

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prep the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add halved baby potatoes, season with salt and pepper, and cook until golden brown and fork-tender, about 10-15 minutes, stirring occasionally. Remove potatoes from the skillet and set aside.

    Cook the Chicken: In the same skillet, add the chicken thighs. Season both sides with salt, pepper, and half of the thyme and rosemary. Cook for about 5-7 minutes per side until the chicken is golden brown and cooked through. Remove and set aside with the potatoes.
