Garlic Bread Grilled Cheese

4 slices of thick-cut sourdough bread

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried parsley

1/2 teaspoon salt

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Optional: red pepper flakes for heat

Instructions
 

Prepare the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, dried parsley, and salt until well combined.

    Butter the Bread: Spread the garlic butter mixture generously on one side of each slice of sourdough bread.

      Assemble the Sandwich: Place one slice of bread, buttered side down, in a skillet over medium heat. Pile the shredded cheddar and mozzarella cheese on top. Top with another slice of bread, buttered side up.

        Cook the Sandwich: Grill the sandwich for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes, pressing down slightly with a spatula to ensure it cooks evenly and the cheese melts.
