4 large egg whites

1 tablespoon cream cheese (softened)

1 tablespoon milk (or unsweetened almond milk for a lighter version)

Salt and pepper, to taste

1 tablespoon fresh chives (chopped)

1/4 cup bell peppers (diced)

1/4 cup fresh spinach (chopped)

1/4 cup shredded cheese (optional, for topping)

Cooking spray or a little butter for greasing the pan

Instructions
 

Prepare the Egg Whites: In a medium mixing bowl, whisk the egg whites vigorously until they are frothy and hold soft peaks. This can be done with a hand whisk or an electric mixer for better results. Set aside.

    Combine Base Ingredients: In another bowl, mix together the softened cream cheese and milk until smooth. Season with salt and pepper.

      Fold in Egg Whites: Gently fold the frothy egg whites into the cream cheese mixture. Be careful not to deflate the egg whites; you want to keep the air in them for a fluffy texture.

        Add Veggies: Gently fold in the diced bell peppers and chopped spinach, ensuring they are evenly distributed throughout the mixture.

          Heat the Pan: Coat a non-stick skillet with cooking spray or a light layer of butter and place over medium-low heat. Let it heat up for a couple of minutes.

            Cook the Omelette: Pour the egg white mixture into the skillet, spreading it out evenly. Allow it to cook undisturbed for about 3-4 minutes, or until the bottom is set and the top is still slightly wet.

              Add Cheese (Optional): If using cheese, sprinkle it over one-half of the omelette.
