Ingredients

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon chili paste (adjust to taste)

1 tablespoon sesame oil

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 cup mushrooms, sliced (shiitake or cremini preferred)

1 cup bok choy, chopped

2 green onions, sliced

4 cloves garlic, minced

1 tablespoon ginger, grated

1/2 cup heavy cream

1 tablespoon rice vinegar

Salt and pepper to taste

Fresh cilantro for garnish

Red pepper flakes for garnish (optional)

Instructions

Marinate the Chicken: In a medium bowl, combine the chicken thighs, soy sauce, and chili paste. Allow it to marinate for at least 30 minutes.

Cook the Chicken: Heat the sesame oil in a skillet over medium-high heat. Add the marinated chicken thighs and sear for about 5-7 minutes on each side until cooked through and slightly charred. Remove from heat and let them rest before slicing.

Prepare the Broth: In a large pot, heat the chicken broth over medium heat. Add the garlic, ginger, and sliced mushrooms. Bring to a gentle simmer for about 10 minutes until the mushrooms are tender.

Cook the Noodles: Add the ramen noodles to the broth and cook according to package instructions (usually around 3-4 minutes). Once cooked, add the chopped bok choy and stir until wilted.

Make the Creamy Garlic Sauce: In a small saucepan, combine the heavy cream, rice vinegar, cooked garlic, and a pinch of salt and pepper. Let it simmer on low heat for about 5 minutes until slightly thickened.

Assemble the Ramen Bowl: Divide the ramen noodle soup into bowls. Top each bowl with sliced chicken, drizzling the creamy garlic sauce over the top. Garnish with sliced green onions, cilantro, and red pepper flakes if you like it extra spicy.

Serve and Enjoy: Enjoy your fiery chicken ramen steaming hot for a delicious and warming meal!
