2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packets)

1 cup sliced shiitake mushrooms

2 cups baby spinach

2 green onions, chopped

4 cloves garlic, minced

½ cup heavy cream

Salt and pepper to taste

Sesame seeds for garnish

Lime wedges for serving

Marinate the Chicken: In a bowl, combine gochujang, soy sauce, honey, and sesame oil. Add chicken thighs, coating them well. Let marinate for at least 30 minutes.

    Cook the Chicken: Heat a medium skillet over medium-high heat. Remove chicken from the marinade (reserving the marinade) and cook for about 5-7 minutes on each side or until fully cooked and caramelized. Transfer to a plate and let it rest, then slice into strips.

      Prepare the Broth: In a pot, add chicken broth and bring to a simmer. Stir in the reserved marinade and add sliced shiitake mushrooms. Cook for about 5 minutes until mushrooms are tender.

        Cook the Noodles: In the pot with the simmering broth, add instant ramen noodles and cook according to package instructions, usually about 3-4 minutes.

          Create the Creamy Garlic Sauce: In a small saucepan, melt a tablespoon of butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add heavy cream, and bring to a gentle simmer. Stir well and season with salt and pepper. Cook for an additional 2-3 minutes until slightly thickened.

            Add Spinach and Chicken: Once the noodles are cooked, stir in the baby spinach and cooked chicken strips into the pot. Allow it to heat through for about 1-2 minutes.
