1 cup all-purpose flour

2 large eggs

1/2 cup milk

1/4 cup water

1/4 teaspoon salt

2 tablespoons melted butter (plus extra for cooking)

1 cup cooked fettuccine

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup cooked spinach (squeezed dry)

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup marinara sauce (for topping)

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Crepe Batter: In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and mix in the milk, water, and melted butter. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes: Heat a non-stick skillet over medium heat and lightly brush with melted butter. Pour about 1/4 cup of the batter into the skillet and swirl it around to coat the bottom evenly. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute on the other side. Repeat with the remaining batter, stacking the crepes on a plate.

      Prepare the Filling: In a mixing bowl, combine ricotta cheese, feta cheese, cooked spinach, garlic powder, salt, and pepper. Mix well until combined. Fold in the cooked fettuccine until well-coated.

        Assemble the Crepes: Place a crepe on a flat surface and add a generous spoonful of the fettuccine filling in the center. Fold the crepe over the filling, forming a pocket. Repeat with remaining crepes.
