2 English muffins, halved

4 large eggs

1/2 cup cherry tomatoes, halved

1/2 cup cooked and crumbled bacon or sausage (optional)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare English Muffins: Place the halved English muffins on a baking sheet, cut side up. Lightly toast them in the oven for about 5 minutes until they are slightly crispy.

      Cook Eggs: In a skillet over medium heat, crack the eggs one at a time, cooking them sunny-side up or to your desired doneness. Season with salt and pepper. Remove from heat.

        Add Toppings: On each toasted muffin half, layer with half of the mozzarella cheese, followed by the cherry tomatoes, bacon or sausage (if using), then the remaining mozzarella. Sprinkle with garlic powder and oregano.
