Egyptian Baseema

Ingredients
  

1 cup semolina

1 cup all-purpose flour

1 cup granulated sugar

1 cup yogurt

1/2 cup unsalted butter, melted

1 tablespoon baking powder

1 teaspoon vanilla extract

1/2 cup desiccated coconut (optional)

1/2 cup slivered almonds for garnish

For the Sugar Syrup:

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

1 teaspoon rose water (or orange blossom water)

Instructions
 

Prepare the Sugar Syrup: In a small saucepan, combine sugar, water, and lemon juice. Stir well and bring to a boil over medium heat. Let it simmer for about 10 minutes until it slightly thickens. Remove from heat and stir in the rose water. Set aside to cool.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a square baking tray with butter or line it with parchment paper.

      Combine Dry Ingredients: In a large bowl, whisk together the semolina, flour, sugar, baking powder, and desiccated coconut (if using).

        Mix Wet Ingredients: In another bowl, mix the yogurt, melted butter, and vanilla extract until well combined.

          Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms. Let the batter rest for about 15 minutes.

            Pour into Baking Tray: Pour the batter into the prepared baking tray and spread it evenly. Using a sharp knife, score the surface into diamond or square shapes and place a slivered almond in the center of each piece.

              Bake: Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Add Sugar Syrup: Once out of the oven, pour the cooled sugar syrup evenly over the hot baseema. Let it soak for at least 2 hours before slicing along the scored lines.
