1 lb ground chicken

2 cups coleslaw mix (cabbage and carrots)

1/2 cup green onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon Sriracha or chili garlic sauce (optional, for heat)

1 teaspoon sesame seeds (for garnish)

Salt and pepper to taste

Cooked rice or cauliflower rice (for serving)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Break it up with a spatula and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

      Add Veggies: Incorporate the coleslaw mix and half of the green onions into the skillet. Cook, stirring occasionally, until the vegetables are tender, about 3-5 minutes.

        Sauce It Up: Pour in the soy sauce, sesame oil, rice vinegar, and Sriracha (if using). Stir well to coat all the ingredients. Cook for an additional 2-3 minutes, allowing the sauce to heat through and the flavors to meld.

          Season to Taste: Taste the mixture and add salt and pepper as needed. Remove from heat.

            Serve: Serve the chicken egg roll mixture over cooked rice or cauliflower rice. Garnish with leftover green onions and a sprinkle of sesame seeds. Enjoy your delicious meal!
