Ingredients
  

4 large eggs

1/2 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped onions

1/4 teaspoon garlic powder

Salt and pepper to taste

4 large tortillas (flour or corn)

2 tablespoons olive oil (divided)

Optional toppings: salsa, sour cream, avocado slices, chopped cilantro

Instructions
 

Prepare the Filling: In a bowl, crack the eggs and whisk them together. Add the diced bell peppers, chopped onions, garlic powder, salt, and pepper, mixing well.

    Cook the Egg Mixture: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until just set but still slightly creamy, about 3-4 minutes. Remove from heat and set aside.

      Assemble the Quesadillas: On one half of each tortilla, sprinkle a couple of tablespoons of shredded cheddar cheese. Spoon the cooked egg mixture over the cheese, then top with more cheese before folding the tortilla in half.

        Cook the Quesadillas: In the same skillet, add the remaining tablespoon of olive oil over medium heat. Carefully place the folded quesadillas into the skillet. Cook for about 2-3 minutes on each side, or until golden and crispy, and the cheese has melted.

          Serve: Once cooked, remove from heat and let cool slightly. Cut into wedges and serve with your choice of salsa, sour cream, avocado slices, and cilantro.
