Ingredients
  

4 large eggs

4 strips of bacon

1 ripe avocado, sliced

1 cup shredded cheese (cheddar or Monterey Jack)

4 large flour tortillas

1 tablespoon olive oil

Salt and pepper to taste

Optional: fresh cilantro and salsa for serving

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Once cooked, remove bacon from the skillet and let it drain on paper towels. Reserve a tablespoon of bacon drippings in the skillet for added flavor.

    Scramble the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet with the reserved bacon drippings, pour in the whisked eggs. Cook over medium-low heat, stirring gently until scrambled and just set (about 3-4 minutes). Remove from heat.

      Assemble the Quesadilla: Lay one flour tortilla on a clean surface. Sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla. On top of the cheese, layer 1/4 of the scrambled eggs, 1 strip of crumbled bacon, and a few slices of avocado. Sprinkle another 1/4 cup of cheese on top of the filling.

        Cook the Quesadilla: Fold the tortilla over to cover the filling, creating a half-moon shape. Heat a non-stick skillet over medium heat and add olive oil. Once hot, carefully place the quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and the cheese starts to melt. Flip and cook the other side for an additional 3-4 minutes.

          Repeat: Repeat the process for the remaining tortillas and filling.

            Serve: Once cooked, slice the quesadilla into wedges. Serve warm with fresh cilantro and salsa if desired.
